This blog is bit overdue but nonetheless a great one to publish, not only from a food point of view but from a nutrition point of view as well. And who doesn’t like hearing about fabulous restaurants and knowledgeable, inspirational people?
Meet Jenny Phillips and Katie Caldesi. Jenny is not only a wonderful & inspirational person but also a nutritionist and owner of Inspired Nutrition, as well as author of the amazing book Eat to Outsmart Cancer which I can highly recommend. Katie Caldesi is fabulous chef and co-owner of Café Caldesi and La Cucina Caldesi Cookery School. La Cucina Caldesi cookery school offers two locations in Marylebone and Gerrards Cross. When Katie’s husband, Giancarlo, was diagnosed as being both diabetic and gluten intolerant, Katie went on a quest to drop the carbs and eat a healthier, more natural diet and this is where Jenny Phillips came in. With Jenny’s expertise in nutrition, they searched out some amazing recipes and also designed some wholesome and yummy dishes that the whole family can enjoy. Their efforts meant the entire family became healthier, lost weight, had higher energy levels and most importantly, reversed Giancarlo’s diabetes. Amazing!
The course was held in Katie & Giancarlo’s beautiful home and together with a small group of people, made for a really fun and relaxed day of learning, cooking and of course eating!
The beauty of this day was that it was mostly practical and everyone got involved with food prep.

Suffice to say, the dishes produced on the day were just so tasty, I think the pictures speak for themselves!
